What Is It?

What cut of meat is this? I’ll post the answer later if no one guesses correctly.

  • Cliff, the former butcher, thought it was pork loin. Then we read the comments. Where do you go to get smoked tongue?

  • I smoked it myself on Sunday, but I had to boil it first so the skin would come off.

  • We had it a lot when I was a kid. My dad was a forty-year veteran meatcutter, and since we were on the poor side, he always made the best of cheap cuts. We had tongue, beef heart and kidneys on a fairly regular basis. My old man could take a chuck roast and oven-braise it until you could cut it with a spoon. Haven’t eaten tongue for many years. Don’t really remember what it tasted like.
